PINK PITAYA CHIA PUDDING

 

1 cup oat milk
3 tbsp chia seeds
1 tbsp maple syrup
1/2 tsp vanilla
2 tsp @go.rooted pink pitaya
a dollop of yogurt
+ a handful of blueberries for the top!

Place all ingredients in a jar. Whisk until combined. Let set in the fridge for 5 minutes. Whisk again until there are no lumps + chia seeds have separated evenly. Cover with a lid + keep in the fridge overnight. In the morning, stir with a spoon, top with some yogurt + add your favourite summertime berries - Enjoy!
