POWER BREAKFAST - BUTTERFLY PEA PARFAIT

Ingredients:

2 cups of plain plant based yogurt

1/4 cup of plant based milk of your choice

2 tablespoons of chia seeds

1-2 teaspoons of maple syrup

1 teaspoon of @go.rooted Butterfly Pea Flower Powder

1 teaspoon of @go.rooted Pink Pitaya Powder

1/4 teaspoon of vanilla extract

1/2 cup of berries (raspberries, blueberries, black berries)

mint and coconut flakes to garnish

Method:

Soak the chia seeds in the plant based milk until plump. If you find there is left over liquid, you can drain it otherwise your yogurt will be watery.

Once the chia seeds have absorbed the liquid, mix them with your plant based yogurt and maple syrup. Divide the mixture into 3 parts.

Part 1: Add the Butterfly Pea Flower Powder and mix until well blended

Part 2: Add the Pink Pitaya Powder and mix until well blended

Part 3: Add a 1/4 teaspoon of vanilla extract and mix until well blended

Layer each part of chia / yogurt mix adding fruit in between. Garnish with berries, mint and coconut flakes. Enjoy!
