RED VELVET CUPCAKES WITH VANILLA FROSTING

Ingredients:

1 3/4 cups all purpose flour

1 cup of maple syrup

1/2 cup of coconut sugar

1/2 cup of raw cacao powder

2 tablespoon of our Beet Root Powder

2 teaspoons of baking powder

1 1/2 teaspoons of baking soda

1 teaspoon of salt

2/3 cup of avocado oil

1 cup of milk of your choice

dash of vanilla

3/4 cups of hot water

Method:

1. Preheat your oven to 350 F

2. Whisk together flour, coconut sugar, raw cacao, beet root powder, baking powder, baking soda and salt.

3. In a separate bowl  combine avocado oil, maple syrup, milk and vanilla. Once combined add the wet mixture to the dry mixture and stir until well combined.

3. Add the eggs one at a time until well combined.

4. Slowly add the hot water.

5. Fill your muffin pans about 2/3 full. Bake for 20 minutes.

6. Cool completely before frosting your cupcakes

Vanilla Buttercream Frosting:

1 cup of soft unsalted butter

4 cups of powdered sugar

2 teaspoons of vanilla

3-5 tablespoons of milk

Method:

Beat the butter until fluffy. Add the icing sugar one cup at a time and continue to beat. Add vanilla and milk until the desired consistency is achieved. Pipe on your cold muffins and enjoy!
